Lentils with rice and greek yogurt

  • 4 tablespoons olive oil.
  • 2 medium onions.
  • 125 grams lentils.
  • 100 grams basmati rice.
  • 1 teaspoon cumin seeds.
  • 1 teaspoon coriander seeds.
  • Half a teaspoon ground turmeric
  • Half a teaspoon of Jamaican pepper.
  • Half a teaspoon of ground cinnamon.
  • Half a teaspoon of brown sugar.

Preparation

  1. Heat the oil in a pan, and when hot, add the sliced onion, until it turns Golden Brown. Transfer to a colander and salt.
  2. Meanwhile, putt he lentils to boil in a smal saucepan, covering them with wáter; bring to a boil and cook for 12-15 minutes, until the lentils are ready, then drain in a colander.
  3. Toast the cumin and coriander seeds for 1 minute to release their aromas. Add a tablespoon of olive oil, rice, turmeric, Jamaican pepper, cinnamon, sugar, salt and black pepper. Stir everything and add about 175 ml of water. Bring to a boil, cover and simmer for 15 minutes.
  4. Remove the pan from the heat, lift the lid and cover the pan with a clean teatowel. Replace the lid on the teatowel and let stand 10 minutes
  5. Pass rice with lentils to a source, add half of the fried onions, and mix it with a fork. Putting up the remaining onion and serve with Greek yogurt seasoned with oil, salt, pepper, a dash of lemon and chopped fresh coriander.
